Dad used to make itlog na maalat (salted eggs) using duck eggs. Here's how he did it:
putik (mud) from ant hill is used, mixed with lots and lots of salt
dipping of eggs in the mixture
the eggs are then covered and left for 18 days
washed and boiled for 3 hours, they're ready to eat.
just don't forget the tomatoes!

ReplyDeleteI would like to try at least 10 eggs, but dont know where to get the putik. Is ordinary garden soil mix with water can make the same putik you are using? Does putik give a different flavor or texture to the itlog maalat?

ReplyDeleteyou can use brine solution instead (1:1 ratio of salt and water). just checked on the 14th day if the saltiness of the egg is to your liking.

ReplyDeleteI love this! My mom used to buy this at a Filipino market in California and we would eat it with tomatoes and rice. So simple but definitely one of my favorite Filipino dishes!
